The Only Jambalaya Recipe You’ll Ever Need

Easy Jambalaya
Whether you’re preparing an after-church dinner or an alternative to your classic holiday menu, Jambalaya is an easy meal that you can set and forget in a slow cooker or Instant Pot.
You’ll spend some time prepping your vegetables, but once you’ve done that, you can set the timer on your cooker and move on to other things. Rest assured that as your various flavors blend on low heat over time, this Southern dish will cook itself.
Jambalaya Ingredients
Meat
- 1 lb Andouille sausage
- 2 Chicken breasts, boneless skinless
Seafood
- 1 lb Shrimp, raw large
Produce
- 1 Bay leaf
- 3 Red Bell peppers, small
- 2 Celery stalks
- 4 cloves Garlic
- 1/2 Jalapeno pepper – diced
- 1 tsp Thyme, dried
- 1 (14-ounce) canned fire-roasted Tomatoes
- 1 White onion – diced
- Fresh parsley – to taste
Canned Goods
- 3 cups Chicken stock
Pasta & Grains
- 1 1/2 cups White rice, long grain
Spices
- 2 tbsp Cajun seasoning or creole seasoning
- 1/4 tsp Cayenne pepper
- 1 tsp Kosher salt
- 1 tbsp freshly-cracked black pepper
- 1 tsp freshly-cracked white pepper
Oils
- 3 tbs Garlic-infused Olive oil
Jambalaya Rice
Jambalaya is best served over long-grain white rice. However, if you prefer brown rice or wild rice, the rich mix of spices will easily blend well with your preferred alternative. Just increase your spice mix with your rice in mind.
Jambalaya Pasta
Looking for a pasta alternative to traditional rice? Try replacing the rice with an organic fettuccini or linguine. Follow the cooking instructions on the package for al-dente pasta and over-salt the pasta when boiling.
Do not overcook your pasta! Remember that your pasta will continue to cook when mixed with the other ingredients.
Instant Pot Cooking Instructions
Begin in the saute mode. Pour in your olive oil. Add your bell peppers and onions to the hot oil and cook until soft. Now brown the sausage and the chicken with the vegetables.
Next, add the fire-roasted tomatoes while stirring consistently. Once the tomatoes are blended well, add all of your spices and continue to stir.
When the spices are well-blended, add the bay leaves and chicken broth.
Set the Instant Pot to Pressure Cook for 7 minutes and do a quick pressure release after the time is up.
After all the pressure is released and the Instant Pot is safe to open, add the shrimp, and parsley. Cover the pot and let the residual heat cook the shrimp. Allow the Jambalaya to blend for at least 10 minutes.
Serve Instant Pot Jambalaya over your preferred rice or pasta. Plate the meal and garnish with green onions (if desired). Done!
Slow Cooker Jambalaya Cooking Instructions
Step 1
Combine chicken, sausage, onion, green pepper, celery, tomatoes, garlic, chicken broth, spice mix, thyme and oregano in a large (5-quart) slow cooker. Cook on low for 5 hours.
Step 2
Add shrimp and rice; raise heat to high and cook for 30 minutes. Sprinkle with chopped parsley, if desired.
Step 3
Plate the meal and garnish with green onions (if desired).
